April 28 » Making Dough Like You're Warren Buffett

They say that life is a shit sandwich, and every day is another bite. But you know what, if this was the bread for it, that would be a-ok. Hey Erin. You asked, therefore you shall receive. I've been feeling a little bit like a hobby-holly-homemaker since we moved. Why? Because I bake bread. Not occasionally. I bake bread every weekend and sometimes in the middle of the week if we run out. (also, on a side note I'm trying to figure out what to ...

January 15 » Bread Is Sticky Business

No-Knead Bread by Fuzuoko No, sadly, that's not the loaf of bread I managed to turn out on Saturday. Not that my bread was bad. No, not at all. It just, well, looked horrible. After about an hour of kneading the bread it still felt too sticky, but I was exhausted and my arms and shoulders were sore from the word, so I left it to rise for an hour and a half and went to brunch. When I got back the dough had easily doubled in volume, ...

January 09 » Fermentation is the Best -Mentation

Bread by Farlane from Flickr If I was on behest to make New Years resolutions, there are only a few I would make. And amazingly most of them involve some sort of fermentation. I woke up this morning to a backyard covered in snow, however light it may have been, it was snow nonetheless. I'm not going to lie to you — I felt like a little kid at Christmas. Walking around Carroll Gardens this AM after brunch at Miriam didn't bother me one bit. Yes, it was blustery. Yes it was cold. But! It was snowing! Snowing! Southerners just don't understand. But, I digress. What this is really about is pork. And boy howdy pork it is. It ...

November 25 » I'm So Sick of Leftovers

Aside from breakfasts (I made turkey hash last weekend with the left over braised turkey legs) I haven't had a meal that didn't involve turkey since Thursday. I mean, everything came out great so it wasn't horrible, but I miss variety. So what's for dinner tonight? Smoked turkey legs (somehow those didn't go to the table... :)) with collard greens. But no mashed potatoes. No stuffing. No sweet potatoes. Just greens and smoked meat and some black eyed peas. But what about the rest of the recipes for thanksgiving? Aside from the bread and the turkeys, I've already given you ...
